As someone who adores carrot cakes, this is my favorite recipe. This carrot cake recipe is simple, fast, and most importantly easy to make.

Carrot cake. The holy grail of desserts.  

Freshly made carrot cake explodes with flavour. It’s a blend of caramel from the brown sugar, playful crunch from the pecans and earthy spices topped with the sweetness of cream cheese frosting.

As kids, we ate it religiously.  It’s delicious, easy to make, and the perfect recipe for those of you who are strapped for time but don’t want to skimp on flavour.

Today we’re going to show you how to make the perfect carrot cake.  Let’s dive right in!

Ingredients for carrot cake recipe

To make a successful carrot cake, you will need the below:

  • Unsalted butter 
  • 12 ounces (2 ½ cups) all purpose flour
  • 12 ounces grated carrots (approximately 6 medium carrots)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon freshly ground nutmeg
  • 1/2 teaspoon salt
  • 10 ounces sugar, approximately 1 1/3 cups
  • 2 ounces dark brown sugar, approximately
  • 1/4 cup firmly packed
  • 3 large eggs
  • 6 ounces plain yoghurt
  • 6 ounces vegetable oil
  • Cream cheese frosting (as much as you like!)

Step 1

  • Preheat the oven to 350 degrees F.
  • Butter and flour a 9-inch round and 3-inch deep cake pan.
  • Line the bottom with parchment paper and set it aside.

Step 2

  • From here you’ll need two mixing bowls, one for the ‘dry’ ingredients and one for the ‘wet ingredients’
  • Grate the carrots at a medium grate and add to a large mixing bowl, setting this aside for later use.

Step 3

  • Mix the dry ingredients together: put the flour, baking powder, baking soda, spices, and salt in the bowl of a food processor and process for 5 seconds.
  • Add this mixture to the carrots and toss until they are well-coated with the flour.

Step 4

  • Now it’s time to prepare the ‘wet’ ingredients.
  • In the bowl of the food processor combine the sugar, brown sugar, eggs, and yogurt.

Step 5

  • With the processor still running drizzle in the vegetable oil.
  • Using a spoon or spatula, add this to the ‘dry’ mixture prepared earlier and stir until just combined.

Step 6

  • Pour the final mixture into the prepared cake pan and bake on the middle rack of the oven for 45 minutes. 
  • Reduce the heat to 325 degrees F and bake for another 20 minutes or until the cake reaches 205-210 degrees F in the center.
  • Remove the pan from the oven and allow the cake to cool  for 15 minutes in the pan.
  • After 15 minutes, turn the cake out onto a rack and allow the cake to cool completely.

Step 7

  • After the cake has completely cooled, add cream cheese frosting to the cake for a sweet finish.
  • Our personal favourite is the Betty Crocker frosting. It’s a versatile topping, and you can get 6 tubs off Amazon for £12- a no brainer!

Bonus step

Toast pecans and add them to the mixture so they bake into the cake.

It’s optional, but toasting the nuts draws the natural oils to the surface, bringing this roasted and rich nutty essence and adding a playful crunch to the final product.

Any extras you have left over can be used as a garnish!

Success Tips

  1. Line your cake pans with parchment. Place your cake pans on a large sheet of parchment paper that has been cut into circles.  You can use the bottom of the cake pan as the cutting guide. Grease both surfaces thoroughly then apply to each.
  2. Make it one day ahead and let it rest to unlock the full flavour.  One of the best things about carrot cake is that it tastes better with time. You'll notice the flavors start to meld into one another, while your cream cheese frosting sets in between the layers. It's absolutely delicious! When you make and frost your cake 1 day ahead, cover tightly in plastic wrap and refrigerate until serving.
